Maya Lima
Flesh tomatoes, green onions, and garlic are roasted and then combined with chicken and simmered. The roasted vegetables are removed pureed and then added back to the broth with the shredded chicken breast and simmered with lime leaves and lemon wedges

romaine lettuce, cotija cheese, tortilla confetti served with chicken stock in a chipotle chili and anchovy based vinaigrette
