Diego Rivera

Diego Rivera, a famous artist of Guanajuato, who painted murals throughout Mexico illustrating Mexico's culture, is this dish's namesake. A tender, pounded chicken breast r stuffed with sautéed vegetables and Monterey cheese, then steamed until cooked. Finished with a spicy pineapple and garnished with a sprinkling of slivered almonds.
